Bahn Mi Bowl

Add my top recipe to your meal prep routine!


This is a recipe I repeatedly come back to because it is not only super tasty, but it is also insanely easy to make. When I first shared this on my Instagram page, it quickly became my most saved and reviewed recipe. Give it a try, and you'll see why!


Ingredients:

  • 1 lb ground pork

  • 2 tbsp minced garlic

  • 1.5 cups cooked rice

  • 2 cups Persian cucumbers, cut in half moons

  • 2 cups shredded carrots

  • cilantro & fresno peppers to garnish

For sauce:

  • 1/4 cup tamari

  • 2 tbsp water or veggie broth

  • 1 tsp minced ginger

  • 1 tsp arrowroot


Instructions:

  1. Cook ground pork thoroughly on stove top.

  2. Add minced garlic and cook for 1 minute.

  3. Add sauce mixture and stir in into pork. Let simmer until sauce thickens.

  4. Remove from heat and allow to cool completely.

  5. Equally divide rice, vegetables and pork in 4 food storage containers. Or if you prefer, store vegetables separately so only rice and pork are reheated when you are ready to eat.

  6. Refrigerate for up to 4 days.
