Honey Sriracha Meatballs

The recipe that made me fall in love with meal prepping!


Sweet, savory, spicy....these Honey Sriracha Meatballs are sure to please your palette!



This is a recipe my husband and I have been making for many years now. I first came across it when I was just beginning my meal prep journey while trying to manage PCOS symptoms. It instantly met the criteria I needed for being simple and delicious, and best of all, my husband loved it too!


It can be a challenge finding recipes that the whole family enjoys while supporting health goals. So this became a regular fixture on our meal plan, and our stomachs happily obliged!


I love pairing this with white rice, but is also great with brown rice if you are looking for a smidge more protein and fiber. Stir fry vegetables complete the meal by providing a great variety of phytonutrients (not to mention beautiful color).


TIP: If you are short on time or energy, briefly microwave the veggies to give them a head start on cooking. Once they are just tender, add them to a pan on the stove with some soy sauce and garlic, give a couple quick tosses, and you are good to go!



For the meatballs:

  • 1 lb lean ground turkey

  • 1 cup panko breadcrumbs

  • 1 egg

  • 1/4 cup green onions, chopped

  • 1 teaspoon garlic powder

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper

For the sauce:

  • 1/4 cup scallion whites, sliced

  • 1 tsp oil

  • 1/4 cup Sriracha

  • 3 tablespoons reduced-sodium soy sauce

  • 2 tablespoons rice vinegar

  • 2 tablespoons honey

  • 1 Tbsp grated fresh ginger

  • 3 cloves garlic, minced

  • 1/2 teaspoon sesame oil

Instructions:

  1. Preheat oven to 375 degrees F.

  2. In a large bowl, mix together turkey, breadcrumbs, eggs, green onions, garlic powder and salt/pepper until well combined. Shape mixture into 16 meatballs and place spaced apart on prepared baking sheets lightly sprayed with cooking spray.

  3. Bake meatballs for 20 to 25 minutes, or until fully cooked through.

  4. While the meatballs are baking, prepare the sauce. In a small sauce pan, heat a a teaspoon of oil. Lightly fry the scallion whites until they are fragrant and a little browned.

  5. Combine the rest of the ingredients for the sauce and bring to a boil over medium heat, whisking continuously. Reduce heat and simmer for 8 to 10 minutes (the sauce will start to thicken) then toss with the meatballs.

  6. Serve with rice and vegetables immediately or divide into meal prep containers to enjoy through the week!

  7. This makes about 3-4 servings.
