Lemon Pepper Chicken Souvlakia

This might be one of the best things I've cooked in our new air fryer! These delicious chicken skewers are packed with flavor and will be perfect for summer. This was such a simple recipe and there is so much you can do with the chicken.
Big shoutout to Hungry Happens for sharing this recipe on Instagram the other day. I took one look at her preview image and knew I needed to try it immediately! I modified it slightly and committed the honey glaze for my nutrition needs, but you can view the original recipe here.

Slice chicken into 2 inch squares pieces.
In a large bowl mix the olive oil, garlic, lemon zest, black pepper, salt, thyme and paprika. Add in the chicken and toss to coat.
You can marinate covered in the fridge or just skewer it directly onto your 8 inch sticks and cook. Pack the pieces tightly onto the sticks.
In your oven at 425°F: bake for 25- 30 minutes flipping half way through.
In your air fryer at 400°F: cook for 12 minutes, then flip and cook for another 10 minutes.
Internal temperature of your chicken should read over 165°F
This made 3-4 servings for me.
Make it a meal
I used my chicken to make a delicious pita using freshly warmed naan, 1.5 cups of veggies (cabbage, tomato, shallot, and cucumber), and drizzling a little tzatziki.
As a side, I added carrots and bell peppers to my plate with hummus.
This would also make a great Greek power bowl by replacing the naan with cooked quinoa or roasted sweet potatoes.
